HOT GERMAN POTATO SALAD - Diabetic Friendly -

3 cups diced cooked potatoes
3 tablespoon real bacon bits
1/8 teaspoon celery seed
1/4 cup apple cider vinegar
1/4 cup water
1/4 cup splenda
1 tablespoon prepared yellow mustard
1 tablespoon dried onion flakes


In a large bowl, combine potatoes, bacon bits, and celery seed in a small saucepan, combine vinegar and water. Stir in splenda, mustard, and onion flakes. Cook over medium heat until mixture is hot, but not boiling, stirring often. Pour hot mixture over potato mixture. Toss well to coat. Serve at once.

Makes 6 servings (1/2 cup each)
