Note: I sort of ripped off this recipe off the restaurant I work, But I altered it, So I give my restaurant semi-credit for this recipe. Har Har...
Ingredients
- 6 big Portobello Mushroom
- Foccassia Bread
- Butter
- Swiss Cheese & Goat Cheese
- Red Onions
- Salt/Pepper & Sugar & Vinegar
- Fresh Basil
Preperation time
10 -15 minutes
Procedure
Switch the Oven on, if you like a nice hot and toasted sandwhich (optional)
(1) Wash thoroughly the mushrooms and remove the stems
(2) Lightly seasoned with salt and pepper, the mushrooms should ideally grilled till cooked, but if that is not possible slowly panfried (Should take about 5-6 minutes for it to be fully cooked)
(3) While the Mushrooms are cooking, Butter the foccasia bread lightly
(4) Slice the red onions (do not dice - you need nice strands of onions) and sautee with a bit of oil, season with salt and pepper. I like to throw in a bit of sugar and vinegar, brings out this sour-ish sweet flavour (kinda like a cheap sauerkraut)
(5)On the buttered bread, place sauteed onions, a good amount of them, be generous it will taste awesome
(6) next place the mushrooms, depending how big your bread is sliced, I usually use 3 mushrooms per sandwhich on the onions
(7) Finely chop the basil and put on the mushrooms
(8) Next put the goat cheese FIRST (as it's lumpy and chunky and not sliced up)
(9) Put the swiss cheese on the goat cheese, so this swiss cheese slice should cover the goat cheese
(10) Place in the oven for 2 minutes
(11) Ready to be devoured.
