Should look something like this. INGREDIENTS: (For 4 to 6 people)
✖ 6 Tomatoes, nice and ripe. :D ✖ 4 strips of bacon (skip the bacon if you're vegetarian). ✖ 1 to 1.5 teaspoons of olive oil (Which you can use to fry the bacon in, or just put directly into the soup for flavor.)
✖ Soup base: ├ 6 tablespoons of sake. (Ideally the good stuff, but cooking sake works fine too. This is okay even if you're serving to children because the alcohol in the sake will completely boil off. It's for flavor, but there will be no alcohol left.) ├ A teaspoon of salt, or to taste. (Usually one is enough, but it's up to your taste.) ├ 2 cubes of chicken bouillon (Or two small spoons of it. If you're vegetarian or want the soup to be vegeteables only, go for vegeteable bouillon.) ├ 1,3 liters of water or so. (If you put a bit less, the flavor is more concentrate. If you put more, it's less.) └ Salt & pepper (to adjust the flavor to your taste. :D)
✖ Extras: ├ Some dried parsley, or fresh one chopped tiny. ├ Garlic, cut in slices. └ A bit of onion, chopped very thin. (Optional.)
■ HOW TO:
① First step♪ a) Wash the tomatoes, remove the stem, and either leave the tomatoes whole or cut in two, it's your choice. :D b) Cut the bacon in small strips, of about 1cm or half an inch wide each. c) Fry the bacon in the olive oil, or by itself, as you please.
② Second step♪ a) Once the bacon is getting crispy and having that lovely fried scent, pour in the sake and the salt. Let it boil a little. The alcohol will quickly evaporate. :D b) Add the bouillon cubes and the water, then wait until it boils again. :D (If you didn't add the olive oil in the previous step, add it now.) c) Once the soup is boilling, add the tomatoes. This will cut the boil. Wait until it boils again, and then, you adjust the cooking time to suit your taste: If you like your tomatoes more firm, stop it as soon as it started boilling again. If you like them more soft & melting in your mouth, leave it boilling for a minute, maybe two. (Medium height fire.)
③ Third step♪ a) Sautee/fry the garlic slices in a tiny bit of olive oil. (If you're not that much into olive oil, you can always use it here rather than have it both in the previous step and here.) Let them be lightly golden, but not to the point where they're getting overcooked. b) Optional step: Sautee/fry the chopped onion too, if you want onion. c) Pour the soup in bowls or deep dishes, putting a tomato in the center of each. Decorate the top of the tomato with the fried garlic (and onion if you wanted), then sprinkle some parsley on top. :D (Recipe from Sagakure. Screen shot of tomato soup credit goes to Hermy Sensei.) This is a soup from my favorite manga/anime Vampire Knight. Have a pic of it for fun (and because I figured out the photo thing here at USM!)
Enjoy! Love, Mayuka
